With Easter on its way, it’s hard to find recipes that are healthy, kid-friendly, and not just the same old same old. These avocado deviled eggs are just the ticket. And, they are relatively healthy, with the addition of the avocado and the substitution of the lower fat mayo.
6 hard boiled eggs
1 avocado, peeled and cubed
3 tbs low-fat mayonaisse
freshly squeezed juice from 1 Meyer lemon
1/8 tsp garlic powder
1/4 tsp cayenne pepper
3 medium-thick slices of honey ham, cut into quarters
How I Made Them:
Halve the eggs and scoop the yolks into a bowl. Set aside the white parts.
Add the avocado, lemon juice, garlic powder, and cayenne to the yolks and mash thoroughly.
Tuck one quarter of a ham slice into the hollow of the egg half, then top with the deviled egg mixture. If you want to be fancy, you can pipe the egg mixture into the hollow, but a spoon works just fine, too. Top with fresh ground black pepper and serve chilled.
