This is a basic cream cheese frosting recipe, just with a little fancification. You can add other flavoring — vanilla, lemon, chocolate, coffee etc. — or go with the traditional version (everything but the espresso powder).


1 stick of butter, softened
1 package reduced fat cream cheese
1 1/3 cup powdered sugar
1 tbs vanilla
1/2 tsp espresso powder

How I Make It:

Beat the butter and cream cheese together until blended and fluffy.  Add the vanilla and espresso powder.  Then add the powdered sugar in 1/3 cup batches until you achieve the consistency you want.  You can frost your cakes and cupcakes with an slim, offset spatula or use a pastry bag for pretty patterns.
